天然食材中颜色漂亮的有很多,其中紫薯算是一个,我一般爱用蒸熟的紫薯,无论做什么颜色都很漂亮。但有时需要粉类的,比如做全蛋蛋糕,甚至有时做特殊种类的饼干等。买过紫薯粉,但不知道是他们加工问题还是怎么回事,做出的成品颜色变化太大,不好看。借着造色情怀的活动东风,我就自己做了些紫薯粉,也做了些紫薯片,这些片片当零食,紫薯粉则可以随自己喜欢添加在任意的美食里面啦。因为这个紫薯粉是熟的,所以怎么吃dou很方便的哦

  • 1.紫薯洗净去皮
  • 2.用切片器切成厚度一致的片。尽量用切片器,手切的不够均匀,烤的时候程度会有差异
  • 3.锅中水烧开,放入紫薯片煮一分钟,不用煮熟,稍微煮一下就行,这样颜色漂亮。如果是吃脆片,水里放一小勺的糖,这样稍微有点甜味,更好吃,如果做粉可以不用放糖
  • 4.把煮好的片捞出控水,摆放到烤盘里。我在烤盘里铺了油布,这样不会沾。
  • 5.做粉的,烤箱上下火加热风,90度烤80分钟。如果是吃脆片,烤箱上下火150度,烤25分钟。低温烘烤的口感稍硬,但颜色更漂亮些。高温烤的口感更脆些。
  • 6.低温烘烤过的紫薯片,晾凉后放入破壁机
  • 7.打成粉即可。晚上厨房打粉,拍照偏色厉害,其实打出来粉和薯片的颜色差不多的。可以看成品图
  • 8.还可以不用煮熟,直接切片低温烘烤
  • 9.但成品的颜色就不够好看啦。所以我还是喜欢稍煮一下再烤
