  • 香菜1根
  • 生抽3汤匙
  • 3汤匙
  • 4克
  • 香油大半汤匙

Steps to make 什锦凉拌菜

  • 1.食材集合。
  • 2.木耳、豆腐皮、胡萝卜分别清洗干净切丝。金针茹用盐水泡几分钟切去老根。
  • 3.准备料头:葱切段,姜切片,一半蒜切片,一半蒜切米,干葱切块,小米辣切圈,香菜切段。
  • 4.锅烧开水关火,入粉丝5分钟,捞出沥干水分。炒锅烧开水,入少许盐和油,分别入菠菜、豆腐丝、金针茹、胡萝卜丝、木耳丝焯水。水中加入油和盐,不仅可去除菠菜一部分草酸,还可使其清葱碧绿,另外还可去除豆腥等其他气味,焯过水的食材分别入冷水过凉并挤去水份。
  • 5.炒制蒜蓉油:因菜比较多,油稍宽些,先入干葱、葱段、姜片、蒜片和花椒爆香,扔掉渣。最后入蒜米和小米辣,蒜米微黄蒜香浓郁关火降温倒入拌菜盆中。
  • 6.调味:将胡萝卜丝、菠菜、豆腐皮丝、木耳丝、金针茹、胡萝卜丝分别挤干水份置于拌菜盆,倒入蒜蓉油,加入香菜段,入生抽3汤匙,香醋3汤匙,香油大半汤匙,盐4克,搅拌均匀即成。
