紫薯炫彩蛋糕卷
一个普通的蛋糕卷,因为加了少许紫薯粉用刮刀划了几道烤出来后带着图案,而且这个淡紫色也使得这个卷卷多了些高贵浪漫情怀。在我喜欢的颜色里除了绿色我还特别喜欢这个淡紫色,曾经上中学时有过一个真丝的这个颜色裙子,住校时好所同学都喜欢找我借着穿,除了它的材质凉快,更重要的大家都喜欢这个颜色,美丽稳重尽在其中。

  • 鸡蛋4个(60g左右)
  • 牛奶70g
  • 低筋粉80g
  • 白糖蛋黄20g + 蛋白50g
  • 玉米油40g
  • 3g
  • 白醋几滴
  • 紫薯粉9g

Steps to make 紫薯炫彩蛋糕卷

  • 1.将紫薯粉加少许水溶解
  • 2.蛋白与蛋清分别打到2个无油无水的盆里,蛋白放入平行冷藏领取一盆,将牛奶与玉米油混合,搅拌均匀
  • 3.筛入低筋粉,拌匀
  • 4.将蛋液与蛋黄用白糖混合,然后粉2-3次倒入面粉糊中
  • 5.拌匀
  • 6.蛋白加入盐和白醋,分三次倒入白糖,电动打蛋器搅打至弯钩
  • 7.烤箱预热180度将1/3蛋白放入蛋黄糊中拌匀,再加入1/3蛋黄拌匀将蛋黄糊全部倒入剩余的蛋白质翻拌均匀
  • 8.取出200g的蛋黄糊加入溶解的紫薯粉翻拌均匀
  • 9.将剩余的蛋黄糊倒入模具中,刮平整后轻震几下
  • 10.将紫色面糊均匀倒在原味蛋黄糊上刮平整
  • 11.用刮刀将面糊每隔2厘米横竖划线
  • 12.将烤盘送入预热好的烤箱中,中层180度15分钟即可烤盘取出轻震几下,取出蛋糕,放至不烫手时将烤的一面朝下,借助擀面杖和油纸将蛋糕卷起,放入入冰箱冷藏30分钟即可
