滑嫩鸡蛋羹
儿子长大了,不再常吃鸡蛋羹。很久没有做了。妹妹有了身孕,我们都不在身边。有一天,她说想吃。光说也说不明白。就做了一次。把步骤拍下来给她看。

Steps to make 滑嫩鸡蛋羹

  • 1.两个鸡蛋,打入碗中,我习惯把白色的受精胚挑掉。
  • 2.挑掉受精胚之后看着比较干净。按网上查阅的资料,那个其实是可以吃的。
  • 3.要把蛋黄和蛋清充分的搅拌均匀。我经常用普通的筷子,转圈打100下左右,就可以把蛋清和蛋黄充分搅拌了。为了说明鸡蛋和水的比例我把打好的鸡蛋倒入了玻璃杯中。
  • 4.这是凉水的量,比鸡蛋多那么一点,这样蒸出来的鸡蛋会更滑嫩。水的量取决于自己对口感的喜好程度。可以自己酌情增减。
  • 5.然后把水和鸡蛋充分的搅拌在一起。会有泡沫出现。
  • 6.用密的漏勺把泡沫去除。
  • 7.放少量的盐,搅拌均匀。
  • 8.一瓣蒜,囫囵放进鸡蛋液中。喜欢吃熟蒜的人,就一起吃掉了。这样,鸡蛋羹的味道会更加香。
  • 9.包上保鲜膜,水开后,放入蒸锅中,大约10到15分钟。中途可以掀开锅盖轻敲碗沿看看蛋液有没有凝固成型。只要蛋液凝固成型,鸡蛋羹就大功告成了。
  • 10.成品!上面倒入生抽或者儿童酱油。也可以根据自己的喜好,加入香油,芝麻等。我不喜欢吃香油,常常不放香油。
