我喜欢用法国黄油来做这款面包,是因为它不仅质地柔软醇香,烤出来的面包滋味也更醇厚浓郁。法国黄油颜色饱和度更高,出产黄油富含的维生素D则更多,所以用来做烘焙、料理,可以让烹饪的食物色泽更佳漂亮。

  • 高筋面粉200g
  • 牛奶100g
  • 35g
  • 干酵母3g
  • 12g
  • 3.2g
  • 奶粉10g
  • 黄油条8根(每根8g)
  • 海盐少许

Steps to make 黄油盐面包

  • 1.准备食材。
  • 2.将除黄油外的面包材料倒入料理机,混合搅拌成面团,再加入软化的黄油,继续揉出稍薄的膜即可(不需要手套膜)。
  • 3.面团放入碗中发酵至2倍大,戳下去不回缩就说明已经发酵好了。
  • 4.面团分割45g一个,搓圆松弛10分钟。
  • 5.再搓成水滴形,冷藏松弛60分钟。
  • 6.将水滴面团擀成底宽7-8cm、长50cm左右的三角形,底边裹入8g黄油条。
  • 7.两侧涂少许融化的黄油,然后卷起来,卷好之后尾巴压底下,放入烤盘。
  • 8.顶部喷水后继续室温发酵30分钟。
  • 9.入烤箱前撒少许海盐,烤箱预热190度中下层烤9分钟,开热风再烤3分钟左右。
