鸡汁豆皮卷
千张包,江浙一带特色小吃,清淡鲜美。

  • 千张(有的地方叫豆皮或百叶)2大张
  • 猪肉末200克
  • 荸荠4个
  • 鸡汤或骨汤,适量
  • 生抽1茶匙
  • 蚝油1茶匙
  • 料酒1茶匙
  • 味精少许
  • 白胡椒粉少许

Steps to make 鸡汁豆皮卷

  • 1.准备各种材料,猪肉馅带点肥肉,肥三瘦七或二八比例比较好,根据自己的喜欢选择,纯瘦肉做出来没有带肥肉的香。葱姜分别切末备用。
  • 2.猪肉馅放在大碗中,加入葱姜末、加1茶匙生抽,一茶匙蚝油,一茶匙料酒,再加适量的盐和少许味精、少许白胡椒粉调味。然后顺时针搅拌,把肉搅上劲
  • 3.荸荠去皮切成小颗粒。不需要切成末,小颗粒口感更好。
  • 4.切好的荸荠放入搅拌好的肉馅中,再次拌匀成馅料。
  • 5.千张用开水烫一下洗净,切成等边方块。裁好的千张边长约12-14厘米,太小了不好包馅。
  • 6.取一小张裁好的千张皮,在千张的一角处放上拌好的肉馅。
  • 7.将肉馅包紧卷实,
  • 8.做好的千张包放在深盘里,淋入鸡汤或骨汤与千张包持平。(做好的千张包可以蒸,也可以煮)
  • 9.放入蒸锅,水开后计时,蒸15-20分钟即可,这样蒸好的千张包子,可以直接吃,也可以用来烧汤或者煮火锅。
  • 10.出锅喽!汁鲜味美,清爽又不油腻,很适合夏天吃哦~~
