话梅排骨
经常做排骨,想尽方法来对付,蒸焖煎炸,不过时下比较闷热,就用话梅来做做开胃菜。

  • 排骨约350克
  • 话梅6粒
  • 生姜8片
  • 葱头1/2个
  • 碎冰糖2大勺
  • 生抽2大勺
  • 老抽1/2大勺、
  • 胡椒粉1/3小勺
  • 料酒2大勺

Steps to make 话梅排骨

  • 1.把话梅隔夜浸泡。
  • 2.把生姜和红葱头切片。
  • 3.把排骨煎至出油和焦香,出锅。
  • 4.锅放底油,把预先砸碎的冰糖放2大勺和放姜片入锅,开中火,用铲子慢慢搅动。
  • 5.一直炒到冰糖变焦红色,加入红葱片,继续爆香。
  • 6.加入浸泡过和话梅和浸泡话梅的水,若水不够可加些清水,不要太多,倒入料酒2大勺,够煮排骨就行,烧开。
  • 7.倒入排骨,大火烧开汤汁,收小火盖锅盖焖约15~20分钟。
  • 8.肉焖软后大火收汁至原来量的1/4,试试味,如果味道不够该加啥就加啥,觉得OK可上碟享用。
