花式南瓜馒头
馒头也看开花,按照我爸爸的话来说,就是把食物做的飘飘亮亮,看起来很有食欲,看着就想吃,吃起来也一定好吃!

Steps to make 花式南瓜馒头

  • 1.酵母加水激活,加入10克白糖
  • 2.面粉称好做白色面团
  • 3.把酵母水慢慢倒入面粉里搅拌均匀
  • 4.和成面团用保鲜膜包好醒发
  • 5.南瓜蒸熟后用搅拌机打成南瓜泥,(南瓜泥放凉到38度左右加入3克酵母和10克白糖拌匀)南瓜泥太烫会把酵母烫死!面发不起来,如果南瓜特别甜,不放糖也可以
  • 6.把南瓜泥倒入面粉里搅拌均匀
  • 7.和成面团用保鲜膜包好醒发
  • 8.发酵好的面团中间用手指戳一个洞不回缩就算发好了
  • 9.面团排气后,先取南瓜面团制作第一种花式!取一个60克的面团揉圆
  • 10.把面团搓成大约60厘米的成条形
  • 11.两头反方向卷起来
  • 12.卷起来两边大小一样多,
  • 13.用筷子向中间夹一下并拢
  • 14.夹好后用刀在四方每个花瓣中间对斜切一下,
  • 15.全部切好的菊花馒头
  • 16.取一个南瓜面团20克,擀成圆薄片,取一个40克白色面团放入中间包起来
  • 17.包好收口朝下轻轻擀圆
  • 18.(留中心点不要切断),用刀均匀地把切成12等份
  • 19.将每一份向一个方向拧一下切口朝上,成花形
  • 20.另取一个小一点的白色面团擀成圆形,用刀切成8等份,每一份切口向中间捏一下
  • 21.这个也是面团分成12等份,只要把叶子用手捏成尖尖的也瓣就可以
  • 22.再另取一个小的南瓜面团也用同样方法捏成小花型
  • 23.包好的面团收口朝下擀圆,平均分成8等份,再在每份表面划两刀,
  • 24.每一份用手向中间捏一下,捏成紫荆花
  • 25.全部做好放在蒸屉上二次发酵
  • 26.做好馒头二次发酵
  • 27.第二发酵
  • 28.第二次发酵
  • 29.发酵好上锅水开上汽后蒸12分钟,焖1分钟开盖
