彩珠小饼干
这个饼干做法很简单,步骤少,而且原材料也很常见。最适合我们这种烘焙小白来制作,成功率高还能增加烘焙信心呢。无需黄油,无需泡打粉,无添加的饼干吃起来更放心。放一个嘴里咬一口嘎嘣脆,好满足~好有成就感。

  • 低筋面粉75克
  • 细砂糖30克
  • 柠檬汁3滴
  • 糖珠2勺

Steps to make 彩珠小饼干

  • 1.准备好材料,并用aca电子秤称好材料。
  • 2.蛋黄里加入三分之一的白糖,用打蛋器搅拌至颜色变浅呈蓬松状态。
  • 3.蛋白里加入剩下的白糖,挤入几滴柠檬汁。
  • 4.用打蛋器将蛋白搅拌至硬性发泡(就是将盆倒扣过来蛋白也不会脱落)。
  • 5.取三分之一的蛋白糊加入到蛋黄糊里,然后用橡皮刮刀按不规则方向切拌。(千万不要划圈搅拌,那样容易消泡)。
  • 6.把拌好的蛋黄糊倒入到剩下的蛋白糊里,快速的切拌均匀。
  • 7.将筛好的低筋面粉分成两次倒入蛋糊里。用同样的手法切拌均匀。拌好的面糊是呈轻盈,蓬松,无颗粒状态(这步骤忘记拍了)。
  • 8.把蛋糊装入裱花袋中。
  • 9.将蛋糊挤入铺好油纸的烤盘上,尽量挤的薄一点,中间留点空隙。(我是新手,所以剂得也不是太均匀,大家凑合看吧)
  • 10.在蛋糊表面撒上适量糖珠,糖针(没有糖珠也可以省略此步)。再放入预热好的烤箱,上下火180度先烤十分钟,再转150度烤十分钟。
  • 11.烤好的饼干不要急着拿出来,放烤箱里虚闷十分钟,然后拿出来(虚闷一会儿饼干会脆一些,这是高手教我的哦)。晾凉后密封保存。
  • 12.如果饼干受潮,可以拿到烤箱150度回炉几分钟,口感一样嘎嘣脆~
