玛格丽特有个相当长的学名:住在意大利史特雷莎的玛格丽特小姐,据说有一位面点师爱上了这位小姐,于是他做了这种甜点,并把这位小姐的名字作为这款法式甜点的名称。玛格丽特是绝对的新手级饼干,它不会用到繁多的工具,也不需要特殊的材料,简单朴实的外观,味道却是香酥可口,有些类似旺仔小馒头的口感。本方子是60块饼干的量,每个饼干5克。颜值也是棒棒哒*

Steps to make 玛格丽特宝宝饼干

  • 1.首先我们来煮鸡蛋,怎样才能煮出易过筛的蛋黄?煮鸡蛋时冷水下锅,浸泡3分钟,点火中火煮沸腾,沸腾后再煮8分钟关火,捞出放在冷水里冷却。剥开外壳取出蛋黄,蛋黄是干爽的,这样方便一会过筛。两个鸡蛋只需要2个蛋黄。备用。
  • 2.然后将黄油软化,注意这里不要把黄油软化成水状,一定是膏状,用打蛋头一戳就能戳破的状态。
  • 3.将糖粉和盐加入软化的黄油里,用电动打蛋器打发至体积稍稍膨胀,颜色稍变浅
  • 4.把蛋黄用小勺按碎,放进面粉筛内,开始筛蛋黄,过筛的蛋黄更好吃,绵软。
  • 5.用小勺用力按压蛋黄,几下就过筛好全部蛋黄,如图。
  • 6.用电动打蛋器搅拌均匀即可。不要过度打发。如图
  • 7.筛入低筋面粉跟玉米淀粉,用刮刀翻拌均匀
  • 8.用手揉成团,面团应该是略微偏干,但不会散开。把做好的面团放入冰箱冷藏一小时
  • 9.一小时后取出冷藏好的面团,把所有面团都揉成一个个5克的小圆球,摆在不粘烤盘上。要是没有不粘烤盘,那就得放油纸在下面。5克的小球在按压时也更容易出现漂亮的裂纹。当然你也可以做成7克一个或10克一个的。
