抹茶毛巾卷
最近被网红甜品刷屏,一个是脏脏包,一个是毛巾卷,脏脏包的热量巨高,只好避而远之;毛巾卷实际是翻版的千层蛋糕,饼皮的制作非常简单,班戟皮用平底锅就能搞定;有的平底锅不是辣么平,会中间凸起,烙出的饼皮会四周比较厚;
其实厨房里还有一个工具一直被忽略,那就是微波炉,正准备做牛轧糖,工具都放在手边,顺手用了牛轧糖的整理盘,长方形的整理盘,微波炉高火一分钟,一张饼皮就OK了,特简单;

  • 牛奶200克
  • 黄油10克
  • 淡奶油200克
  • 细砂糖20克
  • 白桃果酱2大勺
  • 五十铃抹茶粉4克

Steps to make 抹茶毛巾卷

  • 1.备齐所有的材料,准备的蜜红豆忘记放了
  • 2.一个鸡蛋和牛奶搅拌均匀
  • 3.抹茶粉和预拌粉混合后,过筛至牛奶中
  • 4.用手抽拌匀面糊,加入融化的黄油
  • 5.面糊搅拌均匀无颗粒,静置十五分钟左右
  • 6.静置后的面糊过筛
  • 7.舀一勺面糊倒入牛轧糖整理盘中,盘子不大(展艺的小号盘子)
  • 8.晃动盘子让面糊均匀的平铺在盘子中,盘子放入微波炉中
  • 9.用微波炉高火加热一分钟,若感觉盘子四周的面糊不熟,再加热10秒即可,微波炉的功率不同,加热时间略有不同
  • 10.揭下饼皮平放在网架上放凉
  • 11.淡奶油提前放冰箱冷藏,加糖20克打至稍硬一点的状态,放入2大勺白桃果酱搅匀
  • 12.放凉的饼皮3张铺在案板上,一张饼皮压一张,饼皮用4张5张都可以
  • 13.把淡奶油涂抹在饼皮的中间,大致抹平,饼皮的尾部不要放奶油
  • 14.饼皮的其他3面向里折起
  • 15.从左向右卷起来,放入冰箱冷藏至少半个小时
  • 16.取出冷藏的毛巾卷,一小勺抹茶粉用细筛子筛在表面,抹茶粉的用量不在配方中;裁一张漂亮的油纸,宽度是毛巾卷的1/3,包起来即可
