【徽菜】――糊菜一款“三鲜翡翠豆花”
安徽的合肥古镇三河是有名的旅游地,那里的糊菜也十分有名,尤其“三河虾糊”最具代表性。
“糊菜”也叫“糊羹”,有多种做法,可荤可素,还可混搭。荤,包括肉类、海鲜等。素,包括各种蔬菜豆制品等。混搭,就是荤素搭配的做法。
今天,制作一款荤素搭配的糊羹,叫做“三鲜翡翠豆花”,制作方法如下;

  • 豆腐450克
  • 菠菜碎250克
  • 虾丁80克
  • 荸荠碎40克
  • 香菇粒30克
  • 鸡蛋2枚
  • 葱末3克
  • 姜末3克
  • 糯米粉适量(水泡)
  • 绍酒10克
  • 白糖10克
  • 味精2克
  • 胡椒粉1克
  • 干淀粉少许
  • 葱油少许

Steps to make 【徽菜】――糊菜一款“三鲜翡翠豆花”

  • 1.把虾丁、香菇丁、荸荠碎、葱末和姜末混合,里面放入两枚蛋黄,用绍酒、盐、味精和胡椒粉调味。
  • 2.放入少许干淀粉拌匀。
  • 3.把豆腐捣碎,里面放入鸡蛋清,用味精、白糖、盐和胡椒粉调味。
  • 4.豆花里再放入适量糯米浆搅匀备用。
  • 5.炒勺上火烧热,注入少许油,下入虾丁等配料炒熟。
  • 6.把炒熟的虾丁等配料倒入盘中铺平。
  • 7.锅中注入少许油,把豆花炒熟备用。
  • 8.锅中注入高汤或清水,撒入少许味精、盐、胡椒粉、白糖调好味。
  • 9.倒入菠菜碎搅拌均匀,然后倒入糯米浆再用中火来回搅拌,使之糊化。
  • 10.菠菜碎糊化后淋入少许葱油即可。
  • 11.把炒好的菠菜糊和豆花倒入盘里,覆盖上事先炒好的配料。
  • 12.在装盘的时候用勺做成太极图案,然后稍事点缀便可上桌食用,在食用时拌匀即可。
