  • 牛腱子2个
  • 豆瓣酱1袋
  • 大葱半根
  • 姜片5片
  • 料酒20g
  • 生抽20克
  • 老抽15克
  • 冰糖一把
  • 白芷3g
  • 草果2个
  • 桂皮1块
  • 香叶3片
  • 丁香2g
  • 花椒6克
  • 大料10g

Steps to make 卤牛肉

  • 1.牛小腿腱子肉两个,冷水下锅。
  • 2.加入料酒,水开后撇去浮沫。
  • 3.准备所有材料倒入新的锅中。盐要多放,放到汤的味道比正常的饭菜还要咸一倍才可以卤出味道。
  • 4.将料酒生抽老抽放入锅内。喜欢吃辣的可以放些干辣椒。
  • 5.将焯水后的牛腱子放入锅内,大火烧开。
  • 6.撇去浮沫,大火后转小火,煮1.5个小时,开盖关火,浸泡4个小时。
  • 7.浸泡后放入冰箱冷藏,取出切片。
  • 8.冷藏后的肉更劲道紧实。
