墨米布丁
墨米又称黑糯米,它与黑米极为相似,但却属于两种米。墨米的米粒比黑米大饱满,粘性强,营养价值特别高,具有滋阴补肾,健脾暖肝,明目活血等功效。
墨米、黑米类的杂粮通常情况都是用来制作杂粮粥,杂粮米饭,吃多了不免也有些味乏。今天我用巴马墨米来做了这款小甜点“墨米布丁”,这也是我第一次制作布丁,也是第一次吃,感觉味道特别棒,墨米吃在嘴里Q弹香糯,加上布丁的滑嫩香甜,真的很特别!

  • 糯米30g
  • 牛奶400g
  • 淡奶油140g
  • 绵白糖55g
  • 鸡蛋3个

Steps to make 墨米布丁

  • 1.头天晚上将巴马墨米和糯米淘洗干净后浸泡
  • 2.泡好的水不要倒掉,直接放入电饭煲里煮熟,墨米煮熟后趁热放入15g绵白糖
  • 3.搅拌均匀备用
  • 4.锅中倒入牛奶、淡奶油和40g绵白糖,中小火煮至糖融化(约75至80度)
  • 5.碗中打入1个全蛋和2个蛋黄
  • 6.将其打散,不必打发
  • 7.再把牛奶慢慢倒入(如果一下倒入,那就会形成蛋花),边倒边不停的搅拌
  • 8.过滤2到3遍
  • 9.先将墨米饭铺垫在模具下面
  • 10.再倒入布丁液
  • 11.封盖上锡纸放入烤盘中,并将热水倒进烤盘中,水量在烤盘的一半位置;烤箱上下火150度预热,烤盘放置中层,烤制40分钟左右
  • 12.烤好的布丁可热吃,也可放入冰箱冷藏后再吃,口感都很好!
