养生杂粮红豆窝头
秋天是丰收的季节,各种蔬菜瓜果、五谷杂粮马上就要新新鲜鲜地来到我们面前。都说米面最养人,尤其是中国人的体质,更适合各种米面粥饭。贴秋膘,没有比五谷杂粮更滋养的了。这款窝窝头,那真是太棒了——除了各种粗粮,我还特别添加的红小豆,为了增加口感,更使用了纯黑糖,不仅滋养身体,而且补血补气,更胜在口感扎实而不失暄腾,香甜适口又不甜腻,当做主食甚是当做零食都很适合。尤其适合女性朋友!绝对不可错过!

  • 黄豆面1杯
  • 小米面1杯
  • 玉米面1杯
  • 面粉1杯
  • 纯黑糖30g
  • 速效酵母粉1小勺

Steps to make 养生杂粮红豆窝头

  • 1.红小豆提前充分泡发;
  • 2.加适量清水入锅中煮熟;
  • 3.煮好后加入黑糖,搅拌至融化;
  • 4.冷却至和体温差不多时, 分开红豆和煮红豆的汤水;
  • 5.在红豆中加入所有粉类;
  • 6.加入酵母粉;
  • 7.拌匀;
  • 8.少量多次加入煮红豆的水,边加边拌匀。(我加了大概150ml)
  • 9.和成均匀的面团;
  • 10.盖上保鲜膜,室温发酵至1.5倍到2倍大,手按感觉充满气泡;
  • 11.将发酵过的面团拍扁排气;
  • 12.双手蘸水,取适量面团(大小随意),先拍成圆锥状;
  • 13.再用一只手的大拇指掏出“窝窝”(双手协调哈。我自己拍照,没法充分表现。不过据说从前的时候,不会“捏”窝窝头的姑娘是嫁不出去的,哈哈~)
  • 14.“捏”好后排入笼屉,蒸锅上汽后上锅,大火蒸25到30分钟。(个头大多蒸会儿,个头小少蒸会儿。不过,因为有黄豆面,比较不容易熟,所以可以多蒸一会儿)。
