  • 转化糖浆65g
  • 枧水3g
  • 色拉油30g
  • 低粉100g
  • 馅料500g

Steps to make 广式月饼

  • 1.糖浆和枧水拌匀
  • 2.加入色拉油拌匀
  • 3.加入低粉拌成面团(不要多揉 拌成团就行)包保鲜膜松弛1小时
  • 4.将皮和馅进行分割 以50g的月饼为例 比例为2比8(皮10g 馅40) 新手可以3比7(皮15g 馅35g)
  • 5.将皮包入馅料 用虎口慢慢收口 直到全部包住馅
  • 6.用月饼模压出形状
  • 7.表面喷少量的水 170度烘烤至有点上色拿出等到月饼不是很烫再刷上蛋黄液
  • 8.继续烘烤至表面金黄色即可
