毛毛虫蛋糕卷
这几天休息在家,有时间做几样焙烘作品了,想着为孩子准备一些有意思的烘焙作品心里会很幸福,这款毛毛虫蛋糕卷是在横条蛋糕卷的基础上造型的,充满了童趣,儿子和他的好朋友们一定会很喜欢的!

  • 低筋面粉80g
  • 蛋清4个
  • 蛋黄3个
  • 细砂糖45g(蛋清打发)
  • 色拉油40ml
  • 60ml
  • 抹茶粉5g
  • 玉米淀粉1小勺
  • 白醋2滴
  • 动物淡奶油100g
  • 糖粉15g
  • 细砂糖15g(蛋黄糊)

Steps to make 毛毛虫蛋糕卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄)
  • 2.蛋黄中加入15g细砂糖,用打蛋器打匀
  • 3.再依次加入水、色拉油、柠檬汁搅拌均匀
  • 4.筛入低筋面粉、玉米淀粉、抹茶粉
  • 5.用打蛋器拌成均匀的流线面糊待用
  • 6.蛋白分三次加入细砂糖45g,打至湿性发泡,提起打蛋器呈现尖角的状态
  • 7.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 8.再将拌好的面糊倒回剩余三分之二蛋白中
  • 9.继续翻拌成细腻糊状
  • 10.取少量淡抹茶面糊放小碗中,再加一些抹茶粉拌成深抹茶面糊
  • 11.装入裱花袋,尖角剪一小口,在铺了油纸的烤盘上描绘出线条图案,放入预热好175度的烤箱1.5分钟拿出
  • 12.剩余的抹茶面糊全倒入烤盘
  • 13.用刮板抹平蛋糕糊表面,轻拍底部,拍出大气泡,放入预热好175度的烤箱烘烤15分钟左右,可以拿牙签试一下没粘就表示可以了
  • 14.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去
  • 15.蛋糕稍冷却换一张干净的油纸倒过来贴紧地卷起来,用油纸包好,放冰箱冷藏1小时定型
  • 16.拿出切成小段
  • 17.淡奶油加糖粉打发
  • 18.将蛋糕卷摆好,挤上奶油霜
  • 19.再用巧克力豆做眼晴,饼干条做触角,做成毛毛虫状,旁边用草莓人和薄荷叶做装饰即成。
