冰皮月饼

  • 豆沙馅200克
  • 糯米粉用来制作手粉糕粉30克

Steps to make 冰皮月饼

  • 1.准备好所有材料
  • 2.把所有粉类混合,加入牛奶,搅拌至均匀无颗粒的面糊。
  • 3.拌匀后加入炼乳、食用油,继续耐心搅拌,直至油完全给面糊吸收。
  • 4.倒入盆中,大火隔水蒸25分钟关火取出。
  • 5.取出后的面团,表面有一层油,这属于正常现象,我们拿一双筷子把面团搅拌下,放一边晾凉。(这时的盆子比较烫,要当心哦)
  • 6.等面团摸上去温温的以后,我们带好一次性手套,开始揉面,把刚才浮在表面的油完全揉进面团里。(用橡皮刮刀可以很轻松的把面团从盆中取出)
  • 7.揉好的面团,表面是光滑无颗粒的。
  • 8.取一个中号保鲜袋,装入面团,把里面的空气挤掉,让保鲜袋贴合在面团上。放一边备用。
  • 9.制作糕粉:取30G糯米粉倒入平底锅中,开小火用铲子慢慢来回翻动,炒至颜色微微泛黄,关火倒入干净的碗中。
  • 10.我用的是50G的月饼模具,馅料和面皮的比例是1:1(一般馅料在20-25G左右)
  • 11.把面团分成25G一个的小剂子。(如果你馅料减少至20G,那么面团就要是30G,总之最后馅料和面团加起来是50G就OK啦。
  • 12.取一块面团,放手心上,用手掌慢慢按压,注意边边的皮要按薄一点。加入馅料用虎口慢慢向上推,直至面团完全包裹住馅料。
  • 13.取少许糕粉在手心,均匀的把面团包裹好。注意糕粉别用太多,会影响成品的色泽。
  • 14.把刚才用糕粉包裹好的面团放进模具中,按压成型。千万别用太大力,因为用力过猛的话,月饼的底部会多出一圈边边。
  • 15.成品
  • 16.如果要送亲友的话,我们就要开始包装月饼啦。取一个50G的月饼包装盒,放入蛋糕底托,在里面撒上少许糕粉,放入月饼,盖上盒盖,用透明胶带把两边黏牢。
  • 17.这样是不是感觉一下高大上许多^_^
  • 18.贴上漂亮的粘纸,放入盒中。
  • 19.终于完工了,美美哒冰皮月饼做好咯。
