榴莲冰皮月饼
说起榴莲,可能就会有不少人捏着鼻子跑掉,嫌弃它的味道。当然,它也会有属于它的粉丝群,我便是其中一个哈。
这款月饼的馅料太软,所以也不好限量,自己能包多少是多少,如果贪多就容易破皮露陷,只要能包好成形就ok啦。

  • 糯米粉50g
  • 粘米粉50g
  • 澄面25g
  • 红豆沙130g
  • 榴莲70g
  • 玉米油25g
  • 白砂糖30g
  • 炼乳30g
  • 纯牛奶200g
  • 熟糯米粉20g

Steps to make 榴莲冰皮月饼

  • 1.先将糯米粉、粘米粉、澄面过筛一遍备用
  • 2.再将牛奶、糖、炼乳、玉米油搅拌均匀
  • 3.把步骤1里的粉倒入拌成面糊状
  • 4.再将其过滤,放置半小时
  • 5.碗口覆盖保鲜膜,上锅蒸30分钟左右
  • 6.蒸熟后用筷子搅拌散热
  • 7.将面团放入面包机中搅拌15分钟(也可以用保鲜膜包起来揉匀)
  • 8.揉匀后,用保鲜膜包好,放入冰箱冷藏2小时以上(时间长点更好操作)
  • 9.先将25g的面团放于保鲜膜中擀成圆形
  • 10.带上干净的一次性手套,把15g豆沙馅捏成圆形,再把约8g的榴莲放入包好。红豆沙的做法:http://home.meishichina.com/recipe-191746.html
  • 11.将馅料放入面皮中
  • 12.包好封口
  • 13.放入熟糯米粉中滚一圈,抖掉多余的粉
  • 14.月饼模具里撒点熟粉拍匀
  • 15.将包好的月饼放进模具里,倒扣,稍稍用力按压
  • 16.脱模后即可
  • 17.做好就可以吃了哦。当然,放进冰箱冷藏后口感会更弹牙,不过我喜欢吃刚做好的口感,软软糯糯味道很赞!
