紫薯冰皮月饼
又是一年的中秋节即将来临,冰皮月饼是一种中秋节食品。从香港传入。20世纪80年代,冰皮月饼在香港的市场出售。作为广东人,很早就喜欢并爱上了中秋节吃冰皮月饼,于是开始DIY冰皮月饼,做上自己喜欢吃的馅。今天就来做紫薯冰皮月饼。PS:主料是皮料,辅料是馅料,月饼皮与月饼馅的比例按3:7,以下材料是与20个50克月饼的配方

  • 糯米粉45克
  • 粘米粉35克
  • 澄粉20克
  • 牛奶180克
  • 糖粉50克
  • 色拉油15克
  • 紫薯500克(肉)
  • 细白砂糖100克
  • 色拉油100克
  • 麦芽糖50克
  • 板栗20克(肉)

Steps to make 紫薯冰皮月饼

  • 1. 制作月饼馅:1.煮熟的紫薯用料理机斩碎,热锅,倒入煮熟炒去水分,加入白细砂糖,炒到糖软化;
  • 2.制作月饼馅:2.加入煮熟切细的板栗肉,麦芽糖,炒软化,分三次加入色拉油炒,炒至不粘锅,
  • 3.制作月饼馅:3煮好的馅,放凉,揉成团,分成35克一份,刚好20份量。
  • 4.制作月饼皮:1.糖粉、牛奶、色拉油加入搅拌;
  • 5.制作月饼皮:2.糯米粉、粘米粉、澄粉过刷,拌均;
  • 6.制作月饼皮:3.步骤5加入步骤4中拌均,没有颗粒状,用保鲜膜包裹好,放置30分钟;
  • 7.制作月饼皮:4.大火蒸约20分钟,即可,PS:具体看各种的锅和火的大小,为了防止水蒸气进入,我用保鲜膜包裹了。
  • 8.制作月饼皮:5.拿出拌均,冷却,揉成面团;
  • 9.分15克一份,刚好20等分;
  • 10.皮擀薄,放入馅;
  • 11.合口,揉均匀;
  • 12.放入50克装的月饼模具中,向下压,即可出。
  • 13.这是做好紫薯月饼,放入冰箱冷藏二天口感更佳。
