越南虾卷
“越南虾卷”不仅颜值高,味道也是棒棒的。米皮特别的Q弹,各种蔬菜清新爽脆。单吃的话,就是天然的淳朴味道,而搭配蘸酱后又是另一种风情,令我想起苏轼的一句诗:“淡妆浓抹总相宜”~

由于各种蔬菜都只是经过最简单的处理,所以它更是一道富含多种维生素的健康美食。

虽然名气大,但其实越南虾卷的制作并不麻烦。只要买到越南米皮,我们在家就可以轻松做出这么一道好看又好吃的美味了哦。

我今天做的这道“越南虾卷”,根据家里人的口味在材料上进行了一些变动,没有加薄荷叶和柠檬叶。蘸料我准备了两种,一种就是用葱姜蒜香菜加生抽、醋、麻油调制的家常蘸料。这个蘸料相信大家都很熟悉,就不多做介绍了。另外还准备了一份“柠檬蜂蜜芥末酱”。这个酱很是清新爽口,我很喜欢,也推荐给大家。

  • 蜂蜜一大勺

Steps to make 越南虾卷

  • 1. 准备好全部材料;
  • 2.虾去头去壳去虾线后焯水片刻,捞出过冷河后擦干表面水分。鸡蛋加入少许盐打散,摊成蛋饼后切细丝。各式蔬菜也切细丝。胡萝卜切丝后可以拌入少许橄榄油;
  • 3.准备一个大一些的盘子,放入少许冷水。然后将米皮浸入水中,两面沾湿即可。大概10来秒,不要泡太久;
  • 4.将米皮平铺在台面上,然后码上各式蔬菜。如果害怕粘连,台面上可以提前抹一层薄薄的油,很少一点点油就可以;
  • 5.从底部将米皮卷起,盖在蔬菜上,然后放上虾仁;
  • 6.继续向上卷一圈,然后将米皮两侧多出来的部分向中间折起来;
  • 7.最后卷起定型,一个虾卷就做好了。依次做完全部的虾卷,然后摆放在事先抹了一层薄油的盘子中;
  • 8.准备好蜂蜜柠檬芥末酱的原料;
  • 9.小碗中放入黄芥末和蜂蜜,然后挤入柠檬汁,拌匀即可。同时准备好另一份蘸料;
  • 10.虾卷上桌,吃时根据自己喜好搭配酱料即可。
