【夏季下饭小菜】麻辣拌鸡胗
鸡胗:味甘平、性涩、无毒。有消食导滞、帮助消化的作用。有治食积胀满、呕吐反胃、泻痢、疳积、消渴、遗溺、牙疳口疮,以及利便除热解烦等。
我是从来没买过鸡胗的,小时候妈妈给也不吃,总觉得哪有鸡腿、鸡翅什么的好吃啊?前些天去超市,看见卖的鸡胗,看上去真干净,听同事说特别好吃,不由自主的就买了点。回家上网查了一下鸡胗还真适合夏天吃,而且现在的黄瓜也很新鲜,再配上川椒,真的很下饭啊!我是先把鸡胗卤好了,卤的时候还放了一根排骨,单独吃那味道都好极了!

Steps to make 【夏季下饭小菜】麻辣拌鸡胗

  • 1.鸡胗用凉水浸泡,去除血水,再放入锅中烧开水焯一下,适量放入些料酒
  • 2.鸡胗用老抽、盐、味精、八角、姜汁拌匀装入保鲜袋腌渍一夜
  • 3.锅中少许油,放入葱段、姜汁爆香,倒入腌渍好的鸡胗和一根排骨(也可加入适量五花肉),锅中加入清水,加入适量盐、老抽、八角、干辣椒、白果、香叶、白砂糖大火烧开,转小火焖煮1小时即可
  • 4.取出鸡胗切片,黄瓜去皮切丁,川椒切小段
  • 5.花生用烤箱160度烤10分钟取出去皮,装入保鲜袋用擀面杖压碎
  • 6.把鸡胗、黄瓜、花生碎、川椒放入盆中,加入少许盐、鸡精,淋入香油、麻油、辣椒油,戴上一次性手套抓拌均匀即可
