Steps to make 辣白菜

  • 1.白菜摘掉外面老帮去根
  • 2.摘好的白菜从中一分二备用
  • 3.摘下的老帮片净备用
  • 4.白菜 白菜帮 逐层撒盐
  • 5.撒完盐的白菜断面向上整齐码放容器内
  • 6.沿容器内壁注水 至没过白菜 覆压重物封保鲜膜备用(一般杀水4到8小时 中间白菜上下调换一次)
  • 7.姜蒜切末备用
  • 8.韭菜大葱切段备用
  • 9.白萝卜 梨切丝备用
  • 10.100克糯米粉 500克凉水 搅拌均匀后小火打糊晾凉备用(打糊过程需不停搅拌)
  • 11.将细辣粗辣糖大盐混合均匀 加800克开水烫匀晾凉备用
  • 12.将所有配料 调料搅拌均匀备用(无调料颗粒)
  • 13.将杀好水的白菜 白菜帮洗净控水后用调好的泡菜酱逐层抹匀(着重白菜根部)
  • 14.将白菜包好断面向上整齐码放在非金属容器内 冷鲜密封保存一周以上即可食用
