和风大学芋
大学芋是将油炸后的地瓜裹上糖蜜的甜点,不过为何会加上「大学」二字?大学芋的名称由来是在大正时代,东京大学赤门前当时的一个店家到了冬天就会贩售蜜地瓜,在学生之间佳评如潮,因此才取名为「大学芋」的样子。大学芋的做法有些像我们的拔丝,制作起来比拔丝又容易了许多,调味使用最常见的作料,在家里做起来非常简单。

Steps to make 和风大学芋

  • 1.将红薯去皮洗净,切成适当的大小,然后用水冲洗。
  • 2.洗净后用厨房专用纸擦干净,然后在180度的油锅里炸7分钟即可。
  • 3.将炸好的红薯放到网上放凉并控干油。
  • 4.将水,砂糖,酱油,醋一起放到锅里小火加热,加热的过程中要不停的搅拌,直到颜色上至焦糖色,并且有黏性。
  • 5.将红薯加到锅里,快速翻炒全部都沾上焦糖马上停火,表面撒上适量的芝麻即可装盘。
