浆水
浆水是流行于甘肃的一种发酵型食品,成品酸香,做法简单,酸爽开胃,适合夏季食用。

  • 莲花菜100g
  • 胡萝卜100g
  • 玉米面1勺
  • 白面1勺
  • 原浆水(引子)1袋

Steps to make 浆水

  • 1.买一袋原装浆水做引子,如果买不到,可用醪糟汁或白醋代替。
  • 2.净锅加水烧开,放入胡萝卜丝、莲花菜丝、芹菜段,焯10~20秒,捞入干净盆中晾凉。
  • 3.盆子要干净,无油无水,有盖子。
  • 4.碗中放一勺玉米面,一勺白面,加适量清水搅拌均匀。
  • 5.净锅加水煮沸,倒入面汁,搅匀煮熟。稀稠皆可,水量视盆子大小,酌情添加。
  • 6.将面汁放10分钟左右,倒入盆中。
  • 7.待降至温热不烫手,放入浆水(引子)。盖上盖子,放温暖处发酵24小时。
  • 8.成品。装入瓶中放阴凉地方保存。
