  • 玉米油25g
  • 45g
  • 白醋几滴
  • 可可粉10g
  • 牛奶少量(化可可粉)

Steps to make 可可戚风

  • 1.分开鸡蛋,蛋黄中加入玉米油,充分搅拌至乳化,然后再加入牛奶,搅拌均匀
  • 2.筛入低粉
  • 3.搅拌至无颗粒状态,备用
  • 4.用辅料中的少于牛奶化开可可粉,备用
  • 5.将可可糊倒入蛋黄糊
  • 6.搅拌均匀,备用
  • 7.蛋清加入白醋,分三次加入白砂糖,准备打发蛋清
  • 8.直到打到蛋白硬性
  • 9.分一半蛋白放入可可蛋黄糊
  • 10.把可可蛋黄糊倒入剩下的蛋白,继续上下翻拌手法
  • 11.混合好蛋白糊
  • 12.倒入模具,烤箱调整到150度,烘烤一个小时左右
  • 13.出炉后立刻倒扣过来,等凉透后脱模
  • 14.可可戚风就做好了,表面是烤架压的印子,比不上外面卖的好看,但是质量却是没得比哦。
