Steps to make 鸳鸯鸡

  • 1.准备:文昌鸡一只,开边,清洗干净。
  • 2.锅里水烧开,加姜片放半只鸡浸熟(白切鸡的做法)约浸45分钟。
  • 3.起锅做另外半只鸡,热锅放油,下姜,蒜,红葱头爆香。
  • 4.放入鸡(包括鸡脚,脖子,胗还有一副鸭胗)。
  • 5.稍微的两面煎一下就可以了。
  • 6.放酱油,糖,米酒。
  • 7.中火煮一两分钟两面都翻动一下让鸡上色。
  • 8.然后再放入一小碗开水,盖上盖子中火煮25分钟。
  • 9.时间到,打开盖子色泽不错,已经熟透了,还有点汤汁可以大点火收汁。
  • 10.用勺了把汤汁淋在鸡肉上让色泽更红亮。
  • 11.两三分钟后,看看是不是比刚才色泽更好看了,关火稍微放凉。
  • 12.另外的白切鸡也浸得差不多了。
  • 13.分别放在盘里稍微凉,斩件装盘即可(白切鸡捞起时抹一点花生油又香又亮。
