芋头酥
材料:
油皮:中粉 100克,糖 10克,猪油 25克,水 30克
酥皮:低粉 67克,猪油 33克,色素 适量
馅料:咸蛋黄 5个,黄酒 适量,芋头 3个,糖 60克,奶粉 50克,猪油25克

Steps to make 芋头酥

  • 1.芋头洗净放入蒸锅中蒸至软烂。
  • 2.将芋头剥出,放入大碗中,捣烂成泥。
  • 3.将芋泥放入不粘锅中,小火,分三次加入猪油,炒干。
  • 4.加入奶粉和糖粉,翻炒均匀。
  • 5.将油皮和酥皮的分别装入两个碗中。
  • 6.用筷子将材料搅成絮状,再揉成均匀面团,包上保鲜膜,放入冰箱冷餐20分钟左右。
  • 7.将蛋黄撒上少量料酒,烤箱预热180度,烤8分钟左右,取出放凉切两份,用20克左右的芋泥包裹起来,放入冰箱冷藏。
  • 8.将面团平均分成5份,揉成球状,放入冰箱冷藏。
  • 9.将油皮压扁,包裹住酥皮。
  • 10.收口朝下擀成椭圆形。
  • 11.将面片卷起,盖上保鲜膜放置15分钟左右。
  • 12.按扁,用擀面杖将面团擀成椭圆扁平状,再卷起,盖上保鲜膜放置15分钟左右。
  • 13.再次按扁,用擀面杖将面团擀成椭圆扁平状,再卷起。
  • 14.将卷起的面团从中间对半切,切口朝下放置。
  • 15.将面团压扁,擀成面皮,包入馅料。
  • 16.烤箱预热170度,烤15分钟左右。
