Steps to make 蒜苔肉丝

  • 1.蒜苔去除尾部和较老的部分,洗净用手掰成小段,加入少许盐拌匀,腌制10分钟。
  • 2.里脊肉切丝,加入1勺料酒、1勺蚝油、1勺生抽、胡椒粉、水淀粉搅拌均匀,最后倒入1勺色拉油拌匀备用。姜切丝、蒜切片、红辣椒切碎。
  • 3.热锅冷油,倒入肉丝翻炒。
  • 4.炒至肉丝变色倒出备用。
  • 5.锅留油,放入姜丝、蒜片、红辣椒炒香。
  • 6.加入腌好的蒜苔翻炒。
  • 7.加入料酒、生抽、酱油翻炒均匀。
  • 8.倒入1小碗清水焖烧1分钟左右。
  • 9.加入炒好的肉丝,调入白糖,翻炒均匀。
  • 10.出锅装盘。
