  • 普通面粉100g
  • 猪油30g
  • 温水50g
  • 白糖5g
  • 5g
  • 油酥用普通面粉100g
  • 油酥用猪油40g
  • 猪肉糜适量(精肥肉比7:3左右
  • 榨菜2块
  • 生抽1汤匙
  • 五香粉1茶匙
  • 1/2茶匙
  • 香油1汤匙
  • 蛋清1个

  • 1.先来制作馅料吧!
  • 2.将榨菜切成末
  • 3.猪肉糜加入生抽、五香粉、糖、香油、蛋清用筷子搅上劲(我的榨菜比较咸了,所以不加盐了)
  • 4.加入榨菜末搅拌均匀待用(我的肉糜和榨菜比例大概3:2的样子)
  • 5.水油皮中所有材料面粉100g、猪油30g、温水50g、白糖5g、盐5g揉匀至光滑的面团,放入保鲜袋中静置30分钟
  • 6.同样油酥的材料面粉100g、猪油40g也揉匀成团,放入保鲜袋中静置30分钟。
  • 7.将水油皮和油酥各分成10份大小,油酥搓圆
  • 8.取一份水油皮用手按扁,包入一块油酥
  • 9.用一只手按住油酥,另一只手虎口处收口,一边转动合拢捏牢
  • 10.收口朝下,包好的10个面团
  • 11.取一份面团手按扁,用擀面杖擀成牛舌状
  • 12.再一折三卷起,再擀成长条,重复2-3次
  • 13.最后再卷起来
  • 14.盖上保鲜膜静置15分钟
  • 15.取一块面团手按成扁圆,再擀开
  • 16.填入鲜肉榨菜馅料
  • 17.卡在虎口边转边包收口底朝下
  • 18.按按扁摆在烤盘上,表皮喷点水,放入预热好200度的烤箱中层,烤10分钟后拿出
  • 19.刷上一层蛋黄液
  • 20.撒上一些白芝麻,再入烤箱烤10分钟即可出炉
  • 21.刚出炉的香饽饽月饼
  • 22.切开一刀
  • 23.好酥松鲜美啊!
