Steps to make 抹茶蜜豆冰皮月饼

  • 1.主材料一览
  • 2.冰皮粉和白砂糖捞匀
  • 3.快速冲入300克开水,搅拌成奶白色
  • 4.大火上锅蒸25分钟
  • 5.蒸至半透明状,刮进小的容器里
  • 6.电动打蛋器调到最高速档,搅拌。注意是用螺旋形勾
  • 7.至奶白色即可
  • 8.工作台上铺保鲜膜,把搅好的饼皮摊上去放凉
  • 9.分好抹茶馅,25克抹茶馅包住5克蜜豆,揉成圆形;冰皮料分成数个小剂子,一个重35克
  • 10.冰皮包住抹茶馅,以虎口慢慢向上推至收口
  • 11.模具的花片刷一点点橄榄油防粘,把饼胚放进去轻轻压几下。防粘也可以用炒熟的澄粉替代。
  • 12.直接压在月饼盒里,盖上上盖,放冰箱里冷藏,随吃随取
