润肺健脾—荸荠胡萝卜烧鸡脯
每到这个时节正是荸荠大量上市的时候,这时我便会买一些用来炒着吃。荸荠生的性寒凉,适合炒熟吃。


荸荠含淀粉、蛋白质、脂肪、钙、磷、铁、维生素C和荸荠素等成分。   
荸荠素对金黄色葡萄球菌、大肠杆菌及绿脓杆菌有抑制作用。   用途:用于温热病,热伤津液,烦热口渴,或大便秘结;血热便血,痔疮或痢疾便血,妇女崩漏;阴虚肺燥,痰热咳嗽,或咽喉不利;痞块积聚,或食积不消;目赤障翳。
荸荠中含的磷是根茎类蔬菜中较高的,能促进人体生长发育和维持生理功能的需要,对牙齿骨骼的发育有很大好处,同时可促进体内的糖、脂肪、蛋白质三大物质的代谢,调节酸碱平衡,因此荸荠适于儿童食用。
英国在对荸荠的研究中发现一种“荸荠英”,这种物质对黄金色葡萄球菌、大肠杆菌、产气杆菌及绿脓杆菌均有一定的抑制作用,对降低血压也有一定效果。这种物质还对癌肿有防治作用。  
荸荠质嫩多津,可治疗热病津伤口渴之症,对糖尿病尿多者,有一定的辅助治疗作用。   
荸荠水煎汤汁能利尿排淋,对于小便淋沥涩通者有一定治疗作用,可作为尿路感染患者的食疗佳品。近年研究发现荸荠含有一种抗病毒物质可抑制流脑,流感病毒,能用于预防流脑及流感的传播。



鸡脯肉是高蛋白低脂肪的肉类:

鸡肉蛋白质含量较高,且易被人体吸收入利用,有增强体力,强壮身体的作用,所含对人体生长发育有重要作用的磷脂类,是中国人膳食结构中脂肪和磷脂的重要来源之一。同时鸡肉有益五脏,补虚损,补虚健胃、强筋壮骨、活血通络、调月经、止白带等作用。
适应人群:
1. 老人,病人,体弱者更宜食用。  
 2. 肥胖或胃肠较弱、担心患糖尿病、动脉硬化的人,应该多吃鸡胸肉。感冒发热、内火偏旺、痰湿偏重之人、患有热毒疖肿之人忌食。

胡萝卜:
胡萝卜健脾消食、补肝明目、清热解毒、透疹、降气止咳。对小儿营养不良、麻疹、夜盲症、便秘、高血压、肠胃不适、饱闷气胀等有一定功效。

“冬吃萝卜赛人参,保健养生在其中”之说;可见冬吃萝卜对人体大有益处,萝卜在市场上随时买到,不仅物美价廉,营养丰富,还能疗疾祛病。胡萝卜素对保护视力、促进儿童生长发育效果显著。胡萝卜生吃养血,熟吃补身。其中的胡萝卜素是脂溶性物质,用油爆炒是最好的食用方式,其营养物质可以充分被吸收。

    Steps to make 润肺健脾—荸荠胡萝卜烧鸡脯

    • 1.准备所有食材。
    • 2.荸荠去皮在盐水中泡5分钟捞出备用,萝卜切成块
    • 3.萝卜去头尾,切成萝卜花。
    • 4.鸡脯肉清洗下先切成条再切成丁。用油、盐、老抽腌制。
    • 5.锅内放油,烧七成热,放盐、加入萝卜炒软。
    • 6.放入鸡脯肉翻炒。
    • 7.放入荸荠,翻炒几下,加50ML-100ML水煮开,加味精翻炒几下出锅即可。
