炒米线
米线系选用优质大米通过发酵、磨浆、澄滤、蒸粉、挤压等工序而成线状,再放入凉水中浸渍漂洗后即可烹制食用。米线细长、洁白、柔韧,加料烹调,凉热皆宜,均极可口。云南人把米线的吃法发挥到了极致:烹调方法有凉、烫、卤、炒;配料更是数不胜数,大锅米线还有焖肉、脆哨、三鲜、肠旺、炸酱、鳝鱼、豆花等。
