  • 鸡蛋3个
  • 低筋面粉75g
  • 玉米淀粉35g
  • 细砂糖90g
  • 奶粉30g
  • 黄油45g

  • 1.先做冰皮,把冰皮用的原料3种粉和砂糖全部倒入碗中,入牛奶搅拌均匀。
  • 2.加入玉米油搅拌均匀。
  • 3.搅拌均匀后的浆液倒入盘中,隔水中火蒸30分钟。
  • 4.取出冰皮,揉搓均匀,放凉备用。
  • 5.咸蛋黄喷少许白酒去腥,隔水蒸熟,用勺子碾碎,筛出粉末。
  • 6.鸡蛋打入盆中,加细砂糖用蛋抽打均匀。
  • 7.加入牛奶、淡奶油搅打均匀。
  • 8.加入面粉、奶粉、玉米淀粉,切拌至无干粉状态。
  • 9.搅拌好的面糊过筛到不粘锅里,咸蛋黄碎和黄油,开小火翻炒。
  • 10.约4分钟左右即可成固体状。
  • 11.馅料平均分45克一个,冰皮分25克一个,冰皮按扁放入馅料,收口搓圆。
  • 12.扑上熟糯米粉,放入模具按压出花型。
