玉米面发糕
年前和大家凑热闹蒸了这个很应时节的发糕,家人很爱吃,只是口感有点儿渣,不比白面面包筋道,下回再研究研究如何蒸出既好吃又口感很Q的玉米面发糕。在日本料理书上把白面的发糕叫中华蒸发糕,很受欢迎。

  • 普通白面粉200克
  • 玉米面粉100克
  • 20克
  • 泡打粉1克
  • 干酵母粉3克
  • 40度温水170克
  • 大枣(水泡上)几粒

Steps to make 玉米面发糕

  • 1.准备好材料。
  • 2.白面粉、玉米粉、泡打粉、糖放在一起拌均匀。
  • 3.酵母粉用分量内温水50cc溶化,再放1克糖搅拌溶化。
  • 4.静等10到15分预备发酵。
  • 5.把预备发酵好的汤水倒入面粉中拌均匀。
  • 6.再倒入剩余的温水拌均匀。
  • 7.拌成面团。
  • 8.装入容器中(我用的是底部可动式的蛋糕模子)。
  • 9.点缀上大枣。
  • 10.放温暖处发酵至2倍左右(冬天我放在了下有温水的蒸锅里,很方便)。
  • 11.入开水锅中蒸20分钟即可(锅盖包上布是为了防水珠掉在发糕上影响美观)。
  • 12.出锅脱模装盘即可。
  • 13.刚出锅的发糕。
