红糖糖蒜
这个糖蒜还是新蒜上市时腌制的,因成品图是腌制了2个月之后才拍的,当时感觉季节过去了,就一直没有发出来。参加美食大赛,感觉这个菜谱特别需要发出来,这样喜欢糖蒜的朋友可以提前收藏,等明天新蒜上市就可以动手自己做一些了。
我家的糖蒜是家传的配方,朋友们吃了都说好吃。有三个配方:红糖、白糖和冰糖加蜂蜜。这款红糖配方的是我比较喜欢的味道,不仅颜色好吃,味道也好,口感也很不错。红糖选颜色发黄的颜色淡一些的,成品颜色会很好看,深色的红糖也可以,味道基本相同,就是颜色会更深些。

Steps to make 红糖糖蒜

  • 1.刚刚上市的新鲜蒜,选外表完整,没有破损,而且蒜辫比较长的,这样剥出来的蒜干净
  • 2.先把外衣剥掉一层
  • 3.然后把蒜辫剪掉
  • 4.最后把根的部分剪掉,还留一层外衣,为了更干净,把它也剥掉。这一层也可以不剥。我喜欢都剥掉
  • 5.完全剥干净的蒜,放通风的地方晾2小时左右
  • 6.用稍黄色的红糖和白醋,醋尽量选比较好的,这样味道也好。当然一般的酿造白醋也是可以 的
  • 7.把醋和红糖一起上火煮开,让糖溶化,然后晾凉
  • 8.把剥好的蒜放入腌制的坛子里
  • 9.倒入糖醋液
  • 10.盖上盖子腌制。大约20天左右就可以吃啦,但是会稍微有点辣。多腌制一段时间就不会辣了。
  • 11.这个是腌制了2个月的。也就是成品图的样子了,一点也不辣了,非常的好吃。
