芋泥铜锣烧
我今天分享的铜锣烧从外边的饼皮到中间的馅料,都是自己制作的,中间夹入的是芋泥馅儿,作为一个芋泥控对于芋泥的喜爱是无处不在的,制作饼皮面糊最为关键,只要掌握好面糊的浓稠程度,仅需要一口不粘锅,不消几分钟就能做出一堆!芋泥馅料我也是用比较简易的配方,免去了淡奶油等材料的加入,尽量用家常材料,做出的芋泥馅儿口感味道也非常棒,而且做法也不复杂。

Steps to make 芋泥铜锣烧

  • 1.来制作芋泥馅儿,芋头和紫薯洗净去皮,切成小丁,摆入蒸锅,选择速蒸模式,15分钟。
  • 2.蒸好的芋头和紫薯丁放入料理机中,加入牛奶,砂糖,高速搅打成细腻的泥状,做好的芋泥装入裱花袋备用。
  • 3.来制作饼胚的面糊,鸡蛋打入碗中,加入玉米油和白糖,盐,准备牛奶和低筋面粉(蛋糕粉)。
  • 4.碗中鸡蛋,玉米油和白糖,盐充分搅拌均匀,过筛加入低筋面粉和泡打粉搅匀,最后少量多次加入牛奶,边加入边搅拌均匀,牛奶用于调节面糊浓稠程度,由于鸡蛋大小和面粉的吸水性不同,牛奶的量可根据实际情况进行调整。
  • 5.要使用不粘效果好的锅具进行饼胚的煎制,选择温度140度(小火)预热后取适量面糊倒入锅中,无需放油,小火煎制。
  • 6.表面出现密集气泡,并且炸裂,就可以翻面了,根据喜欢的饼胚上色程度选择翻面的时间另一面煎制出现焦黄就可以出锅了。
  • 7.饼胚两两为一组,取一片挤入芋泥,再覆盖另一片饼胚,一个铜锣烧就制作完成了。
  • 8.在表面印上漂亮的印章,看起来更有食欲了。
  • 9.软软的饼胚加上糯叽叽的芋泥,简直太好吃了~
