茶碗蒸蛋糕
不用烤箱用蒸锅,没有模具用茶碗,蒸出松软香甜清爽的小蛋糕!

  • 低筋面粉95g
  • 细砂糖95g
  • 全蛋135g
  • 玉米油1.5大勺
  • 柠檬皮屑1/2小勺
  • 鲜榨柠檬汁1.5大勺
  • 泡打粉1/2小勺(可不用)

Steps to make 茶碗蒸蛋糕

  • 1.茶碗内薄薄刷上一层玉米油(分量外)备用;
  • 2.玉米油、柠檬皮屑和鲜榨柠檬汁一起放进小碗,用蛋抽使劲搅打至混合均匀,表面基本看不到油花;
  • 3.全蛋液加细砂糖用电动打蛋器高速打发,开始时颜色偏黄;
  • 4.打到略发白转中速,继续打发至体积膨大、颜色发白、蛋糊浓稠,从打蛋头上滴落的蛋糊不会马上消失;
  • 5.转慢速,继续打发2、3分钟,至蛋糊光滑细腻;
  • 6.一次性筛入低筋面粉(如果用泡打粉要混合后一起筛入),如果蛋糊打发到位,筛入的面粉不会立即沉下去;
  • 7.再加入玉米油、柠檬皮屑和柠檬汁的混合液体;
  • 8.先用蛋抽上下搅拌至无干粉;
  • 9.换刮刀,从下往上翻、切拌至均匀顺滑;
  • 10.倒入抹油的茶碗中,大约8、9分满,静置10分钟左右;
  • 11.蒸锅大火上汽后,放入茶碗蛋糕胚,盖锅盖转中火,蒸大约15分钟;
  • 12.用竹签扎入蛋糕内部,拔出后没有黏黏的蛋糕糊,就是熟了。如果竹签上还有黏糊的蛋液就盖上锅盖再蒸一会儿,即可。
