意式青酱海鲜面
这次去意大利旅行,一路上吃了好多意面,披萨,提拉米苏之类之类的意大利美食,深深赞叹意大利的意面的千变万化,种类繁多,常常是一桌人一人点一样,每道意面口味都不同,但是都一样的美味!尤其是意大利的海鲜意面,更是用料十足,香味四溢。于是从意大利走的时候特地去商店里寻觅了一番,终于找到了制作海鲜意面的香料,哈哈,于是一回家就迫不及待的开始尝试啦!
       在意大利海鲜意面通常使用青酱(Pesto)烹饪,而青酱又分很多种,也并非都是绿色。青酱可以加见坚果,如松子、核桃之类的。常见的意式青酱有:
      Pesto alla Genovese,由罗勒叶、橄榄油、大蒜、意大利硬质乳酪,加上松子核桃烹饪。
      Pesto alla siciliana,加入了番茄,减少了罗勒的用量
      Pesto alla calabrese, 加入了红铃椒和黑胡椒,口味偏辣。
      这次我是采用第一种青酱料制作海鲜意面,用的是配比好的料包,国内的各位可以去超市的进口区或者淘宝寻觅一下,看看有没有现成的料包。
       如果没有的话也可以自己在家做,只要有罗勒叶就可以,平底锅中放适量橄榄油烧热,放入拍碎的一颗大蒜煎一下,再放入几粒松子一颗核桃炒一下,放入干罗勒叶碎翻炒出香味即可。

Steps to make 意式青酱海鲜面

  • 1.准备好原料
  • 2.煮锅中放入足量的清水,倒入三四滴橄榄油,加一点盐
  • 3.倒入意面,放在火上大火烧开
  • 4.另准备一只小锅,倒入准备好的海鲜,煮开
  • 5.煮熟的海鲜捞出备用
  • 6.意面煮熟后同样捞出并用凉开水冲洗一下,泡在凉开水中备用
  • 7.意面煮至这样,面中没有干粉就是熟了。
  • 8.取一个大一点的平底锅,放入适量的橄榄油,放入一勺青酱料,小火翻炒一下
  • 9.倒入煮好的海鲜,继续翻炒出香味
  • 10.刚才煮好的的一面空出水后倒入平底锅中翻炒一下
  • 11.倒入适量盐、还胡椒粉,翻炒一下即可出锅。
