奶油草莓蛋糕

  • 细砂糖35克
  • 动物性奶油100克
  • 动物性奶油200克
  • 黄油25克
  • 鱼胶粉6克(或吉利丁)
  • 草莓5颗
  • 细砂糖10克

Steps to make 奶油草莓蛋糕

  • 1.黄油切小块入小锅,小火加热至黄油融化(这步没拍照片)
  • 2.饼干提前用擀面杖碾碎备用(装入保鲜袋用擀面杖碾压);倒入融化的黄油中拌匀
  • 3.黄油饼干倒入蛋糕模,压实
  • 4.草莓切半,竖放入模具四周
  • 5.草莓放料理机中打成泥,入小锅,加糖搅匀,开小火煮微沸即关火(边煮边搅拌,以免糊底),放入鱼胶粉搅拌均匀,放一旁备用
  • 6.动物性鲜奶油加糖隔冰水打至6-7成发
  • 7.加入提前切好的草莓粒,搅拌均匀
  • 8.倒入步骤5制作的草莓液,用刮刀快速搅拌均匀
  • 9.倒入模中
  • 10.将表面抹平,放冰箱冷藏3小时以上
  • 11.时间到后,从冰箱拿出来,用吹风机或热毛巾沿模具的外边吹一下或捂一会即可顺利脱模
  • 12.奶油 糖打至8-9成发,装入裱花袋,挤出造型
  • 13.摆上草莓、撒上彩色巧克力针即可
