烧椒皮蛋

Steps to make 烧椒皮蛋

  • 1.大舅妈送来的皮蛋。
  • 2.去掉外面包的灰,洗干净放水里,烧开后煮五分钟,捞出来冷却备用。
  • 3.准备小葱大蒜,蒜切米,或用捣蒜器捣碎,葱切花,葱白和蒜米放一起。
  • 4.起锅烧油。
  • 5.油温到八成热,淋在蒜米和葱白上面,放凉备用。
  • 6.两个大青椒,洗净去蒂去籽,拍破。
  • 7.直接放锅里,开小火,一边煸一边用锅铲压,煎出虎皮。
  • 8.翻面,继续煸,压。
  • 9.不断翻面,一直小火,待表皮差不多断层了起锅。
  • 10.撕去脱落的表皮,将青椒肉撕成条状。
  • 11.皮蛋一切四,摆盘。
  • 12.放上青椒条。
  • 13.淋了油的小碗里放生抽,醋,白糖,味精,花椒面(不喜可不放),芝麻油,熟油辣椒,剩余的葱花,和匀后淋到青椒上面,吃时拌匀。
