Steps to make 椰蓉小酥球

  • 1.黄油60克,椰蓉100克,低筋面粉35克,白糖35克,蛋黄两个30克,牛奶20克。
  • 2.60克的黄油软化后加入35g白砂糖打发。
  • 3.打发的黄油呈羽状。打发过程中用刮刀将黄油往中间收一收。
  • 4.分次加入蛋黄。
  • 5.第2次加入蛋黄。
  • 6.打至蛋黄完全吸收。
  • 7.加入20克的牛奶继续打发。
  • 8.中途用刮刀将黄油往中间收一收。
  • 9.加入100克椰蓉
  • 10.用刮刀切拌均匀。
  • 11.筛入低粉。
  • 12.用刮刀切拌,也可以戴上手套用手捏匀,但不要过度搅拌和揉搓,天热可以放冰箱冷藏一会。
  • 13.揪成每个8克重的剂子共33个。
  • 14.滚圆后蘸上椰蓉,并用手掌轻轻压实表面的椰蓉。
  • 15.排入烤盘。
  • 16.上下火175度,中下层或中层,烘烤15~18分钟。烤出自己喜欢的色泽。
  • 17.金灿灿,散发着椰蓉香味的椰蓉小酥球出炉。
