焦糖杏仁糯米船
想做这个糯米船很久了,一直没安排上。没放假的时候想,放了假就有空做了,没想到放假后反而更忙,一日三餐下来竟没有大段的空闲时间。终于下决心在晚饭后搬出各种家什,拍了这个视频。
  糯米船壳找了很久都没方子,只好买,当时买一送一,不记得是中号还是小号了,但肯定不是大号。内馅制作也看了很多食谱,觉得也不难。
  看了看家里的食材,有爱乐薇小杯装淡味黄油,10克一杯,用起来很方便,都不用称量了。坚果我放了杏仁片,你也可以换自己喜欢的。月饼糖浆也可以用麦芽糖代替。

Steps to make 焦糖杏仁糯米船

  • 1.准备食材。
  • 2.除糯米船壳和杏仁片外全部放入不粘平底锅。月饼糖浆也叫转化糖浆,没有可用麦芽糖代替。
  • 3.小火加热,溶化黄油和糖类,边加热边搅拌均匀,煮到110℃左右,没有温度计就煮到有密集的泡泡关火,倒入杏仁片。
  • 4.搅拌均匀后倒在硅油纸上。
  • 5.整理成长方形,厚度不要超过糯米船壳的高度,用油纸包好晾凉冷藏至硬。
  • 6.注意:焦糖杏仁馅的厚度不要超过糯米船壳的高度。
  • 7.冷藏变硬的杏仁馅切小块,长、宽要小于糯米船壳的长、宽。
  • 8.每个糯米船壳装入约7克的焦糖杏仁馅,不要装太多,多了烤的时候会溢出。
  • 9.烤箱上下火150℃预热。
  • 10.放中层烤18~20分钟,烤到表面呈焦糖色即可。
  • 11.香、甜、脆!
