香菇海带味增汤
据说日本人长寿的秘密就是每天三碗味增汤。味增,是一种发酵豆制品,它营养丰富,含有较多的蛋白质、脂肪、糖类及多种矿物质。常吃味增不仅能预防多种癌症,还有降低胆固醇,抑制体内脂肪积聚,改善便秘,预防高血压、糖尿病等功效。味增最简单的吃法莫过于做汤,以味增为汤底,搭配豆腐、海带或其他蔬菜,滋润又滋补。秋季进补多喝汤,不妨试试味增汤。
传统的味增汤,要用海带和木鱼花来提取高汤增鲜提味儿。木鱼花虽能出鲜,但却是酸性比较高的食物。如果强调素食,不妨去除木鱼花,改用干香菇搭配海带来提鲜,味道一样的清淡不失醇厚、浓郁不失鲜美。

Steps to make 香菇海带味增汤

  • 1.材料一。
  • 2.材料二。
  • 3.香菇提前充分泡发。
  • 4.小海带按使用说明洗净浸泡;
  • 5.海带切粗丝;香菇切粗片;泡香菇的水澄清留用;
  • 6.豆腐切小块儿,入淡盐水中浸泡5到10分钟,捞出沥干水分备用;
  • 7.香葱斜切段儿备用;
  • 8.汤锅中加入泡香菇的水;
  • 9.下入香菇丝和海带丝,开中小火,慢慢煮至汤汁微微沸腾;
  • 10.下入豆腐,保持中小火,慢煮;
  • 11.中间打去浮沫;
  • 12.煮至豆腐浮起,汤汁微微沸腾;
  • 13.用一个小漏勺,将味增放入漏勺,浸入汤汁,用刮刀慢慢将味增化开;(也可以将味增放在小碗中,盛出一些汤汁,化开味增后,再倒入锅中);
  • 14.略煮一会儿,不等汤汁沸腾,即可关火,加入葱花,即可。
