镜面蔓越莓慕斯蛋糕
蔓越莓冻鲜果,打成果泥来做个蔓越莓的慕斯,
口味极酸的蔓越莓鲜果非一般人能消受,

  • 6寸戚风蛋糕2片
  • 蔓越莓果泥125克
  • 动物性鲜奶油200克
  • 吉利丁片12克
  • 白糖75克
  • 凉开水25毫升
  • 蔓越莓果泥30克
  • 凉开水120克
  • 细砂糖30克
  • 吉利丁片5克

Steps to make 镜面蔓越莓慕斯蛋糕

  • 1.慕斯:6寸戚风蛋糕片2片,蔓越莓果泥125克,动物性鲜奶油200克,吉利丁片12克,白糖75克,冷开水25ML。
  • 2.6寸戚风切片剪边,去掉蛋糕屑。
  • 3.吉利丁片用冷开水泡软备用。
  • 4.蔓越莓果泥和水、白糖混合放在小火上加热至白糖完全融化。
  • 5.将软化的吉利丁片挤干水分加入果泥液中搅拌至完全混合。
  • 6.鲜奶油打发成半流动的奶昔状。
  • 7.将果泥液加入奶油中轻轻翻拌。
  • 8.成均匀慕斯液。
  • 9.将剪边的蛋糕片放在蛋糕模中。
  • 10.倒入一层慕斯液,没过蛋糕。
  • 11.再将另一片蛋糕片盖上。
  • 12.倒入剩余慕斯液,抹平表面,放入冰箱冷藏至凝固。
  • 13.镜面:蔓越莓果泥30克,凉开水120克,细砂糖30克,吉利丁片5克。装饰:糖珠适量。
  • 14.将镜面用的吉利丁片放入冰水中浸泡至软化。
  • 15.果泥与凉开水混合。
  • 16.再过滤掉果渣,得到澄清的液体。
  • 17.再将液体与细砂糖一起倒入锅中,小火加热,搅拌至溶化。
  • 18.离火,放入吉利丁片充分搅拌至完全融化。
  • 19.取出凝固好的慕斯蛋糕,将镜面液倒在表面。
  • 20.放入冰箱冷藏5分钟左右,表面略微凝固,取出。摆放上糖珠,继续放入冰箱冷藏至镜面完全凝固。
  • 21.取出,用吹风机沿模具外周略微吹热后脱模。
  • 22.小心移到蛋糕垫板上。
