鲜蘑丝瓜鸡蛋汤

  • 嫩豆腐150克
  • 鸡蛋1颗
  • 生姜5克

Steps to make 鲜蘑丝瓜鸡蛋汤

  • 1.将鲜蘑放入盐水中浸泡十分钟左右后洗净;
  • 2.将丝瓜削皮洗净,然后切小滚刀块,大块难熟,烹饪时间长且不易入味;然后再将生姜、香葱切碎即可;
  • 3.将鸡蛋磕入碗中,再用筷子打散至表面有大量气泡;
  • 4.①起锅倒入少许油,不要像炒菜时那样放很多,油热后倒入鲜蘑不停翻炒,去除其味道;
  • 5.②鲜蘑稍微翻炒变软后,继续倒入丝瓜,不停翻炒;
  • 6.翻炒至丝瓜边缘稍微变色,倒入1碗清水、姜末,大火煮沸;
  • 7.煮沸后倒入嫩豆腐,大火烧开改成中小火炖煮3分钟左右;
  • 8.将鸡蛋液均匀的淋入锅中,可以先中间再以画圆圈像两边扩散,并迅速用筷子搅散;
  • 9.临出锅前倒入半勺盐,均匀撒入葱花,翻拌均匀出锅即可。
