公公没生病前,总爱做这道菜给我们吃,每天下班回家,总能看见他老人家趴在窗口悠闲地抽着烟,眼睛注视着我们回来的方向,等我们出现在他的视线后,转身进了厨房,上楼开门后总能见到两块复炸过刚出锅的猪排,这时吃正好,外酥里嫩,回味无穷……
今天做的这个炸猪排考虑到小朋友吃,用里脊肉代替了。(

Steps to make 炸猪排

  • 1.里脊肉切块。
  • 2.用刀背拍扁。
  • 3.用刀背交错敲打出纹路,使之松散好入味。
  • 4.放生抽、料酒、胡椒粉、盐抓匀腌片刻。
  • 5.两面撒一层面粉。
  • 6.再放蛋液里滚一圈。
  • 7.两面裹上面包糠。
  • 8.油锅炸至两面微黄。
  • 9.沥出。
  • 10.吃的时候再复炸一次。
  • 11.放吸油纸上吸干多余的油。
  • 12.吃的时候可以沾辣酱油或者番茄酱。
