圣诞纸杯蛋糕
圣诞的脚步越来越近了,为了烘托一下圣诞的气氛,就做了这么些纸杯蛋糕送盆友,买了好多的装饰,一样来一种试试,看看哪个好看,稍微装饰一下,就很美腻了有没有。依旧是小嶋老师的海绵蛋糕体,因为真的很好吃。

  • 全蛋150克
  • 水饴6克
  • 细砂糖90克
  • 低筋面粉100克
  • 黄油26克
  • 牛奶40克
  • 淡奶油200克
  • 糖粉20克

Steps to make 圣诞纸杯蛋糕

  • 1.准备好所有的材料
  • 2.将糖、水饴加入全蛋中,将盆放进热水里面隔水搅拌,使其温度达到40度后取出
  • 3.打发至划8字不容易消失即可,或者,用牙签插进蛋糊里面1.2厘米的位置,如果牙签不倒或者慢慢倒下说明OK
  • 4.筛入低筋面粉
  • 5.平均快速的搅拌蛋液,30~40回左右面粉几乎看不见
  • 6.牛奶和黄油混合隔热水融化成液体后,顺着硅胶刀倒入面糊中,进行搅拌均匀后,面糊变得有光泽,拎起面糊,流动会比原先的蛋糊要快要稀一点~但是很有光泽
  • 7.蛋糕糊装入裱花袋,挤入纸杯至8-9分满(此方子刚好做12个连模)
  • 8.160度的烤箱烤30~35分钟(依自己烤箱脾气为准)
  • 9.烤好后出炉放凉
  • 10.淡奶油200克加20克糖粉,进行打发
  • 11.打发至硬性状态
  • 12.加入一点色素进行调色
  • 13.装入裱花袋,进行裱花,然后装饰即可
