迟到的月饼——【苏式鲜肉月饼】
长假从老妈那里带了一盒猪油回来,是假期时妈妈新熬出来的,特好~
这东西是带回来了,不拿来做点儿什么东西,就太对不起我这千里迢迢的一路携带了。。。
在外面忙活了几天,今天终于有时间在家里歇一下,手痒痒的做了酥皮月饼。。。我真是抽疯儿了,自己明明不喜欢吃酥皮的。。。唉。。。太酥了,一碰就掉一堆的渣儿。。。


材料:
水油皮:面粉120g,细砂糖15g,猪油35g,水55g
油酥皮:面粉110g,猪油55g
馅料:猪肉馅500g,细砂糖40g,蜂蜜30g,熟芝麻5g,香油10g,生抽20g,料酒5g,盐12g,生姜粉5g,大蒜粉5g,花椒粉1小勺,大葱90g

Steps to make 迟到的月饼——【苏式鲜肉月饼】

  • 1.1. 制作馅料:取五花肉馅儿,依次放入除大葱外的所有调味料,调匀备用;
  • 2.2. 制作水油皮面团:将面粉、细砂糖和猪油一起放到盆中,用手搓匀,呈粗玉米粉状;
  • 3.加入热水快速搅匀,揉成有一定筋度的光滑的面团,静置醒发20分钟;
  • 4.制作油酥皮面团:将面粉和猪油放到一起,搅匀既成油酥面团;
  • 5.将静置好的水油皮和油酥皮面团分别分成10个剂子;
  • 6.取一个水油皮剂子压扁后擀成圆形,放入一个油酥皮剂子;
  • 7.包好后擀成椭圆形
  • 8.卷起,静置松弛15分钟
  • 9.取松弛好的面团卷,竖着擀开
  • 10.再次卷成卷儿,松弛15分钟
  • 11.将大葱切碎成葱花,放入之前调好的肉馅儿中搅匀,备用;
  • 12.将松弛好的面团卷从两边向中间捏紧
  • 13.按扁后擀开成面皮,放入适量馅料
  • 14.像包包子一样捏紧并用虎口位置挤压收口,最后可揪掉多余的面皮
  • 15.收口朝下放入烤盘中,按扁后在表面用印章沾红色素盖章
  • 16.放入预热好的烤箱中下层,以190度烘烤8分钟
  • 17.翻面后继续烘烤8分钟
  • 18.再次翻面,将温度降至180度继续烘烤10分钟即可
  • 19.*上面的方法烤出来的月饼是扁平形状的,也可以烤成像包子一样的球状:包好的月饼坯子收口朝下用双手拢高拢圆,放入烤盘后盖章,以170度烘烤30分钟即可;
