蔓越莓冰皮月饼
其实我不太爱吃月饼,每年的月饼都吃到发霉,也没吃完,到最后都给丢掉。今年本不打算做月饼的,昨天去逛烘焙店,看见新上了很多款没吃过的月饼馅,心里就开始长草了,再加上月饼活动进行的如火如茶的,怎么也得支持下。于是,挑了好几种口味,其中一款就是这个蔓越莓月饼馅。其实自己做馅料更健康,但我挺懒的,自己懒得去炒馅料,也挺麻烦的。蔓越莓天然清新的味道,酸酸甜甜,香甜而不腻。

  • 粘米粉17克
  • 澄面10克
  • 细砂糖25克
  • 牛奶92克
  • 色拉油10克
  • 蔓越莓馅180克

Steps to make 蔓越莓冰皮月饼

  • 1.准备所需材料。
  • 2.将牛奶、色拉油、细砂糖混合拌匀后,再加入糯米粉、粘米粉、澄面混合均匀。
  • 3.将混合好的粉糊过筛。
  • 4.然后静置30分钟。
  • 5.将静置好的粉糊上锅大火蒸15分钟。
  • 6.蒸熟后打散。
  • 7.微凉后,用手把冰皮揉成光滑的面团,完全冷却后,放冰箱冷藏半小时。
  • 8.取适量糯米粉,放平底锅内炒熟。
  • 9.炒至微黄即可盛出备用。
  • 10.将蔓越莓馅分成45克一个,搓成圆形。
  • 11.将冷藏的冰皮取出,取一小块再搓成圆形。(皮料我没称,大概25克左右)
  • 12.再把冰皮团压扁。
  • 13.再把馅料放在冰皮团上。
  • 14.用左手虎口捏着,慢慢的往上推,直到把馅料全部包裹住。
  • 15.将包好的冰皮团粘上点熟糯米粉。
  • 16.在模具里撒点熟糯米粉,让熟糯米粉均匀粘在模具壁上,然后轻轻磕两下把多余的熟粉磕出来。
  • 17.然后把包好的冰皮团光滑的一面冲里放进月饼模里,然后用手把面团压实,底部要压平。
  • 18.然后轻轻推月饼模顶部,冰皮月饼就给压出来了。
